Feeling like a 'straight man' yet?
They're about the same speed but the Xcaliber is way more overstable.
The Xcaliber is about as overstable as a Max, if not more so. The CH Destroyer has stablility more like a TeeRex or a bit more overstable than one, depending on the TeeRex (they vary quite a bit from disc to disc).
Hope this helps, but I'll bet there's much better information in the 'Ask Dave' thread ... somewhere ...

comparisons of the 2 discs?
Before you compare the 2 to each other, you must compare them to themselves....
CFR Destroyer: Runs vary along 2 lines. Stiff or mushy plastic and flat or domey flight plates. Mushy/flat = understable. A mushy and flat one is one of the flippiest Destroyers you can get, especially in lower weights. Mushy domey ones are pretty straight and true to the Destroyers flight #'s with the -1 high speed turn. Flat and stiff ones are similar, but have a little more resistance to turn. Domey and stiff are very overstable.
Now for XCs...I've not experimented with them as much, but I have thrown a few different ones and I watch people throw them all the time. I have a red, 175g, production run Star XC. It turns over easier than the domey/stiff CFR Destroyer, but comes out of the turn quicker. It does not go as far. That is the main theme with the XC for me...It does not glide, but is more ballistic. For me, the same throw and line with both discs has the Destroyer beating the XC by 20-30'. If I try and reach back and throw very hard (like if I was at a wide open distance course, fly 18, etc.) the XC gets out fast and is predictable and long. For me though, I can "smooth" out a Destroyer at about 80% and get the same result. If I threw harder I would like the XC more. As it is I generally accept about 450' as my limit on the golf course without totally sacraficing control in normal conditions. The echo star XC seems to be faster and more stable than the one I have.
