It seems like Turn and Fade go hand in hand, meaning high turn (more negative) means low fade and vise versa. For example, no disc exists with Sidewinder turn and Max fade. What is the closest disc (any Manufacturer) with a true S-Shaped flight like this? Also, I was wondering if throwing lightweight overstable discs (like a 150 Flick) accomplishes this. Lighter weights flip more, but is this offset by the fact that you lose the fade?

best to just beat up something overstable. it will turn and keep most of it's fade.

Try a Beast. If you flip the Beast too much, try an Orc. Both of these discs have a negative high speed turn (the Beast has more) yet they fade pretty hard unless they are overpowered.

XL, SS Avenger, Flash, and SS Surge all have "S-Shaped" flights on the Discraft side.

You've apparently never thrown an Aerobie Epic with a backhand or a forehand. It flips like MAD but when it slows down it has a very sudden and hard fade. Not an ideal disc (the plastic sucks, the grip is awkward, etc.) but it definitely has some major S-Curve flight patterns.

You can try forcing an overstable disc on an anhyzer path knowing that it will always finish with a hard fade. To me this is one of the more predictable ways to accomplish an S shot.

Wouldn't a chickenwing with a lid be an easier shot?

Beast, beat up wraith, surge. I find these less predictable than forcing over an overstable driver though

What about a Starfire X? IMO, it is close to a Wraith on the slow fade, but with more high speed turn.

Starfire X should have less high speed turn than the Wraith.

Anyway, I'd recommend a DGA Rogue. It wants to fly on an S more than any other disc I've thrown. On the more stable end a Tsunami will hold a turnover line and then pull out predictably. A stable Teebird is also an excellent choice.
