I swear that I saw something covering this previously, but I cannot find it now...

What if a person is for example AM 2, but with the coming update they are going to get bumped up to AM 1. I thought that I read a provision in the rules that allows that player to continue to play AM 2 in the case where the tournament is a part of a local series that they have previsouly been playing.

Correct, as long as the Series Director applied to the PDGA Tour Director to allow that exemption for their series participants.

Interesting, in the Competition Manual (and perhaps the rule book, mine isn't handy at the moment), it's specified that a player may bring a Caddie OR Carrying Device (3.5B). Does this mean the caddie must carry the discs without a Carrying Device? Carrying device is specified as: "disc golf bags, foldable chairs and push cart companions"

It's not an exclusive "either/or" clause. Both can be brought along.
