I don't know anything about the courses in the rest of the state, but Bowling Green has like 8 courses in very close proximity to one another, and a lot of them are nice. I just played a tournament down there a few weeks ago (6 courses in 2 days) and it was great! (Paducah is a really nice area though, some courses there would be awesome).

Also, you can always try the Course Directory, which is in the top menu bar.

I am played about 50 courses and the most prettiest course I ever played was Idlewild in Burlington, Kentucky.

Sanders Ferry in Hendersonville, TN (north Nashville suburb) is on a LAKE, not stream....but it's a scenic one, with a couple of holes involving the lake. The rest is on some pretty good hills overlooking the lake. Probably not "most scenic", but "scenic", nevertheless.
