It would be easier to know how Discraft discs fly is they would include both turn and fade instead of some stability rating, or at least a flight chart.

More detail, less detail, you still have to throw a disc to see how it flies for you. I can never tell anything more from Innova's detail than I can from Discraft's lack of detail.

Very true, but if I cant tell how a disc is supposed to fly upon first few throwings then I wont know whether or not I'm throwing it correct based upon form, or if it's just too much disc for me.
That's why I loved the INNOVA chart's because if I wasnt getting the disc to fly as it should have been then I knew I needed to work on my game to improve it so I could get the disc to do what it was intended for. Then once I know what it's intended for, I can learn how to use said disc is a variety of situation.
